Gluten Free Breakfast Casserole

I was never a big fan of casseroles, mostly because I’m not a fan of peppers and onions and everyone always fills their casseroles with peppers and onions. Despite this, in the past few years I have eaten quite a few breakfast casseroles. I am part of my local MOPS group and we have an amazing breakfast buffet that we all pitch in for every two weeks during the school year, and lucky for me, there are quite a few people who are gluten free besides me so there is always a gluten free option.

One day a friend made a tater tot casserole with sausage and cheese, so simple, but it was a hit. When I received a package of chicken sausage links from First Fresh I knew it would be perfect for this. I added my own little spin to it and it was delicious! The perfect casserole to take to a brunch. It can easily be made ahead of time and heated the day of.  This cheesy, sausage goodness will have everyone going back for seconds!

Recipe Tips

This gluten free breakfast has it all- potatoes, eggs, cheese, and sausage. All the best parts of breakfast all in one, easily sliceable dish. I love easy recipes that don’t require a lot of ingredients or effort. Especially when I am trying to get my toddler out of the house, I need something fast. This gluten free breakfast casserole is also perfect for a morning with family or a quick breakfast while on vacation.

The Tater Tots

Double check your packaging to be sure they are gluten free. Occasionally a brand will add flour as a binder and you definitely don’t want that! Be sure to cook them until they are nice and crispy so they hold up well.

The Eggs

Not much to say about these. Just whisk them up and add a little salt and pepper (I know this isn’t included in the “Four” ingredients, but salt and pepper shouldn’t really count!)

The Cheese

Use your favorite blend. I used sharp cheddar and a bit of parmesan. Use whatever kind is your favorite, you will just want something that will melt well.

The SausageFresh First Sausage

I used First Fresh Chicken Sausage Breakfast Links for this recipe. I love them because they are full of flavor. Use whatever kind is your favorite, but make sure they have lots of flavor. The casserole gets it’s seasoning from the breakfast sausage link so you want one that you love!

Final Notes

I used a Corning Ware dish for this casserole. It is approximately the size of a 9 x 9 pan. If you want to make a larger pan (9×13), use the whole bag of tater tots, add a couple extra eggs and a bit of extra cheese.

This gluten free breakfast casserole is delicious! Feel free to add your own spin, even some peppers and onions if you like!

4 Ingredient Gluten Free Breakfast Casserole

Servings: 6 Servings

Ingredients

  • 16-20 ounces of cooked tater tots about half-3/4 of a bag, enough to fully cover the bottom of pan
  • 6 eggs whisked with 1/2 teaspoon salt and 1/2 teaspoon pepper
  • 1 cup shredded cheese
  • 1 package approximately 14 ounces breakfast sausage links, cooked and cut into bite sized pieces

Instructions

  • Preheat oven to 350
  • Layer cooked tater tots into lightly grease baking dish.
  • Layer sausage pieces on top.
  • Pour whisked eggs over sausage and tater tots
  • Cover with cheese
  • Bake for 25-30 minutes, until eggs are puffed up and cheese is melted.

    Yummy! I love breakfast casseroles like this. They really come in handy for batch cooking too. It’s nice to have slices on hand in the freezer for quick meals.

    I love breakfast casseroles! I especially like when I can make them the night before and then just heat them up in the morning. I bet this would be great for when company stays over.
