Gluten Free Turkey Zucchini Meatballs

On top of it you could even classify them as healthy. Lean turkey, tons of zucchini, gluten free multigrain bread, egg, and parmesan cheese all baked to perfection.
The Perfect Meatball
The trick to getting the perfect texture in these Turkey Zucchini Meatballs is the gluten free bread. Most people use bread crumbs in meatballs, but zucchini has a lot of moisture. Using gluten free bread, allows the moisture from the zucchini to be absorbed, making for the perfect texture.
I love using Schar’s Multi Grain Bread in this. I feel like it gives it a depth of flavor. Aside from rice flour, it also contains buckwheat, millet, flax seed, and quinoa. All kinds of good things.
Recipe Notes
Turkey Zucchini Meatballs are a snap to make. Start with ground turkey, shred a medium sized cucumber and tear up 2 pieces of multi grain gluten free bread. Squish it all together with an egg, some parmesan cheese, garlic, onion flakes, salt and pepper. It really doesn’t get any easier.
Recipe Notes:
Zucchini- Be sure to squeeze out your zucchini. It has a lot of moisture in it. I use a cheese grate to get the zucchini really thin.
Gluten Free Multi Grain Bread– You will want to tear it up in little pieces. The bread needs to be able to be easily distributed throughout the mixture.
Ground Turkey- I used a 90% Lean ground turkey for these. You could also use ground chicken.
I chose to serve these with marinara sauce, but honestly, they are delicious on their own. They would also be great made in a sandwich or served as an appetizer for a party!

Best Ever Gluten Free Turkey Zucchini Meatballs
Ingredients
- 1 pound ground turkey
- 2 slices multi grain gluten free bread
- 1 cup shredded zucchini
- 1/2 cup shredded Parmesan
- 1 egg
- 1 teaspoon dried onion flakes or 1 tablespoon chopped onion
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 425.
- Line baking sheet with parchment paper
- Tear bread into small pieces.
- Combine all ingredients and mix together well.
- Roll into 1 1/2 inch balls (slightly smaller than a ping pong ball).
- Place on baking sheet.
- Bake for 18 to 20 minutes.
- Serve with marinara sauce.
