Dishes Aren’t My Friend

Dishes are my nemesis. Of all household chores, they are my least favorite. Scrubbing stuck on junk just isn’t my idea of a good time. There are times when I dread cooking, just because I don’t want to have to scrub dishes. We don’t have a dishwasher, so washing by hand is a must and I’ve always hated it.

I love cheesy dishes, like these Cheesy Chicken Roll Ups, stuffed with bacon, spinach, and more cheese, but washing up afterward has never been my idea of a good time.

Cheesy Chicken Roll Ups

One of my favorite dishes to make is baked chicken roll ups. This delectable dish starts with a white sauce. Chicken is pounded out, stuffed with cheese, spinach and bacon and rolled.

Once placed in the baking dish on top of the white sauce, it is covered with more white sauce, cheese (you can never have too much cheese!) and gluten free breadcrumbs. Then baked to an ooey-gooey perfection. It’s ridiculously good.

While this dish is amazingly delicious, cleaning all the baked on white sauce and cheese can be a pain.

Turns out my problem wasn’t the baked on goo, but that I was using the wrong tool to clean my dishes! The new Scotch-Brite® Non-Scratch Scrub Dots Sponge was exactly what I needed.  It makes a world of difference. I even got my stepmom hooked on them!

Baked Cheesy Chicken Roll Ups {Gluten Free}

Ingredients

Chicken

  • 1 1/2 pounds chicken pounded to 1/4 inch
  • 1 10 ounce package frozen spinach
  • 6 pieces bacon cooked and crumbled
  • 8 ounces shredded mozzerela
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

White Sauce

  • 1 1/2 cups milk
  • 2 Tablespoons Butter
  • 2 Tablespoons Gluten Free Flour
  • salt and pepper to taste

Crumb Topping

  • 2/3 cup gluten free bread crumbs
  • 1 Tablespoon melted butter
  • 2 Tablespoons dried parsley

Instructions

  • Preheat oven to 350.

White Sauce

  • Melt butter over medium heat.
  • Whisk in gluten free flour.
  • Slowly whisk in the milk.
  • Simmer until thickened.
  • Salt and pepper to taste.

Chicken Roll Ups

  • Mix together spinach, bacon, 1/2 of mozzarella, garlic powder, salt and pepper.
  • Divide between chicken and roll tightly.
  • Spread half of white sauce in bottom of dish.
  • Place chicken on top sauce.
  • Cover with remaining sauce.
  • Cover with remaining mozzarella.
  • Wrap tightly with foil.
  • Bake for 25 minutes.
  • While baking combine gluten free bread crumbs, parsley, and melted butter.
  • Remove from oven.
  • Spread bread crumbs over top.
  • Cook for another 10 minutes, until chicken is one and bread crumbs are golden.

    I hate dishes too! We have a dishwasher but sometimes it seems easier to handwash than empty the whole dishwasher. haha! I know someone who wanted to get two dishwashers so she never had to put dishes away. Just take them out of the clean and put them in the dirty dishwasher. Wouldn’t that be the life?!

    Those looks like such a fun meal! Glad you found a way to clean up the cheesy mess afterwards – we don’t have a dishwasher and that part is always a nightmare.
