Cheesy Gluten Free Shrimp and Grits is an easy weeknight meal, packed with flavor and cheesy goodness, plus there’s bacon!

Cheesy Gluten Free Shrimp and Grits
I love cheese grits. It’s in my blood. Cheese grits and fried fish are a Southern staple, at least they were in my family. I’m not even sure why I didn’t make cheese grits and fried fish for this post, it would have been a good idea- perhaps for another time.
When I got this month’s American Gluten Free box and saw the grits I knew I wanted to make Cheesy Gluten Free Shrimp and Grits. I’ve been craving shrimp and grits for awhile. I’m a sucker for anything with cheese. Plus, there was Pamela’s cornbread mix. It was a perfect combo.
These grits were a bit different than the ones I usually buy, still gluten free, but they are made from rice. I was a bit hesitant at first but turns out they are amazing.
The Delta Blues Rice Grits in this month’s American Gluten Free Box were just as creamy as corn grits but made of United States grown rice. It’s not often that you find American-grown rice, so I was really excited to try them. We are huge rice eaters (blame by Peruvian-Japanese husband, it’s in his blood) so finding a brand that is as local as you can get to us is pretty awesome.
It’s one of the things I love about getting my American Gluten Free box each month, I’m always getting to try new brands that I might not have heard of otherwise.
Quick and Easy
I love dishes that are quick and easy and these Cheesy Gluten Free Shrimp and Grits fit the bill. The grits take about 20 minutes (about the same time as rice) and shrimp cook really quickly. The corn muffins that we had on the side cooked in about 20 minutes as well so it was definitely an easy dinner.
You may have noticed that with my shrimp, there is also some bacon. Why? Because I am of the opinion that bacon makes everything taste better! I love the salty little bites it adds. Plus, my toddler won’t eat shrimp, but she will eat bacon, so her dish was cheesy grits with bacon!
I hope you love this dish, it may not be completely traditional, but it is delicious and easy to make. Plus, for all of you who can’t have corn, these rice grits are perfect!

Cheesy Gluten Free Shrimp and Grits
Ingredients
Cheese Grits
- 1 cups grits I used Rice Grits, but corn can be used
- 1 cup gluten free chicken broth
- 1 cup milk
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1 cup shredded sharp cheddar cheese
Shrimp
- 2 pieces bacon cut up
- 1 pound shrimp peeled and deveined
- 2 teaspoons gluten free cajun seasoning
- 1 lemon
- 1 tablespoon butter
Instructions
Cheese Grits
- Combine all ingredients EXCEPT cheese in a small pot.
- Bring to boil over medium heat.
- Stir to combine.
- Lower heat to low.
- Cover and cook for 20 minutes.
- Remove from heat.
- Add cheese and stir.
Shrimp
- Zest lemon until you have about 1/2 a teaspoon.
- Sprinkle lemon zest and cajun seasoning over shrimp. Set aside.
- Cook bacon in a pan. Remove the bacon, leaving the grease.
- Add the shrimp to the pan, cook for about 2 minutes on each side over medium heat.
- Squeeze lemon over shrimp.
- Toss and continue cooking until shrimp are cooked through.
- Turn of heat and remove shrimp and add one tablespoon butter to the pan.
- Allow butter to melt with lemon juice and seasonings.
- Add back shrimp. Stir to coat.
Serving
- Serve cheese grits topped with shrimp and bacon.
