Chipotle Shrimp Salad
I love shrimp. It’s one of my favorite proteins and so versatile. A few months ago I made Chipotle Marinated Shrimp with an Arugula Pesto and Zoodles. It was delicious, but the shrimp were pretty spicy.
I had a bunch of the chipotle shrimp leftover from the recipe and had a stroke of brilliance. Why not mix it with mayo and eat it on sandwiches? Best idea ever!
Chipotle Marinade
This chipotle marinade is so simple. Canned chipotle peppers in adobe sauce are your friend. All the work is done for you and they are jam-packed with flavor.
They are quick marinade, shrimp do not need long to soak up the flavor, so this shrimp salad is ready in under 30 minutes.
One Salad, Many Options
I photographed this Chipotle Shrimp Salad on Schar Gluten Free Baguettes (they are one of my favorites!), but you could also stuff mini French rolls (Udi’s makes some great ones!), but it goes so much further than bread!
Try this delicious, spicy, shrimp salad on:
- a salad
- in an avocado (like in this Aguacate de Palta!)
- on gluten free crackers
- skies the limit!
Seriously, this is one of the best shrimp salads ever. After shooting this, I ate it for lunch with my stepmom and sent some to my dad. They loved it as well.

Chipotle Shrimp Salad
Ingredients
- 1 pound shrimp peeled and deveined
- 1 chipotle pepper
- 4 tablespoons adobo sauce
- 1 lime juiced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/3 cup mayonaise regular or light
- gluten free bread
Instructions
- Blend together chipotle pepper, adobe sauce, lime juice, olive oil, and salt.
- Marinated shrimp in chipotle marinade for 15-30 minutes
- Sautee shrimp for about 60 seconds per side or until done.
- Chop shrimp and mix with mayo.
- Eat on gluten free bread or on top of salad.

This was a great dish, I grilled the shrimps and loved the additional flavor grilling gave them. My husband enjoyed this too, thanks for adding something new to my lunch rotation 🙂
