The Next Level of French Toast
French toast is a classic breakfast food. It isn’t necessarily fancy, but it is easy to dress up and simple to make. I don’t think I’ve met a person yet who doesn’t like French Toast.
The crisp outside and eggy inside, with a drizzle of maple syrup- it’s everything you could want in breakfast. You might think it is already at the peak of perfection, but I’d have to disagree. French Toast can be taken to another level, and this Gluten Free Cookie Crusted French Toast proves it!
Chocolate Chip Cookie Crust
My families favorite gluten free chocolate chip cookies are Goodie Girl Quinoa Chocolate Chip. They are gluten free (yay for me!), but over that, my family just loves them. My daughter’s eyes light up like a Christmas tree whenever I pull out one of their go packs for a special snack. I watched my husband bypass a ton of goodies I got from the South Beach Food and Wine Festival for these chocolate chip cookies.
My little family would eat the Gluten Free Goodie Girl Quinoa Chocolate Chip Cookies for breakfast, lunch, and dinner, so I thought, why not come up with a fun way that they can eat cookies for breakfast? Making this Cookie Crusted French Toast has been a huge hit!
Cookie Crusted French Toast
Making Gluten Free Cookie Crusted French Toast is a lot easier than you think. It is a basic gluten free French Toast recipe, and you press the gluten free bread into smashed cookie crumbs.
There is a trick to it, though:
Instead of cooking it in a pan, bake it on a cooling rack in the oven.
If you try to cook it in a pan, you run the risk of all the chocolate chips burning before the egg soaked gluten free bread is cooked.
This is also a fun recipe to get the kids involved. My daughter loved helping crush the cookies. I put them in a Ziploc, gave her one of her play hammers and let her go at it. It’s always great when you can get the kids involved in cooking.
Even with the sweetness from the cookies, I still like a little drizzle of maple syrup on top of my gluten free Cookie Crusted French Toast.

Chocolate Chip Cookie Crusted French Toast {Gluten Free}
Ingredients
- 6 pieces gluten free bread
- 2 eggs
- 2 Tablespoons milk
- 1 Tablespoon melted butter slightly cooled
- 1/2 teaspoon vanilla
- 9 gluten free chocolate chip cookies I love Goodie Girl!
Instructions
- Preheat the oven to 400 degrees.
- Place foil over a baking sheet and put a cookie cooling rack on the backing sheet.
- Crush the cookies, put in a shallow dish and set aside.
- Whisk together the eggs, milk, butter, and vanilla.
- Soak each slice of bread for about 30 seconds.
- Press into crushed cookies.
- Place on baking sheet.
- Bake for 15-20 minutes, turning halfway through.
