Make Ahead Desserts
With the holiday season upon us, life has gotten a bit crazy. Maybe it’s that I have one daughter who is about to turn 4 or that I’m 33 weeks (I can’t believe it!) pregnant with our second, or just the holiday/end of year time, but I feel like the days are just getting away from me.
Also, our air conditioner has been broken (I know, I know….most of you are in snow, but it’s still 80 degrees here), so anytime I can avoid turning on the oven, I’m all for it. Enter make-ahead, no bake desserts.
I am loving desserts, like this no bake peppermint cheesecake (with white chocolate!) that I can make whenever I have a few minutes and store in the fridge until ready to serve. Plus, they are ridiculously delicious.
The Age of Good Gluten Free Products
I am so lucky to live in a time (and a place) where I can find gluten free versions of all my favorite goodies. Schar is hands down one of my favorite brands, from their bread to their crackers, we are always well stocked. Their honeygrams taste just as good as regular grams (maybe better!) and are perfect for the holidays.
Last year we used them to make amazing gluten free gingerbread houses (check them out here!) and they are great in pie crusts. You could actually take this mini mason jar dessert and make it into a regular no bake pie by using the Schar honey grams to make a gluten free gram cracker crust.
I’m kinda partial to single-serving desserts in jars, so I prefer them like this, but if you want something that looks like a pie, double the filling and go for it!
Gluten Free No Bake Peppermint Cheesecake
This no bake cheesecake is a snap to make. Softened cream cheese, powdered sugar, white chocolate, cream, and of course crushed peppermints make up the filling. Top it with crushed Schar honeygrams for the “crust” and you are ready to go.
The filling can even be made a couple days ahead. Just take out and let soften for about 30 minutes before serving and add honeygrams.
The honeygrams bring the perfect crunchy element to this dessert. With the creamy cheesecake filling and a bite of honeygrams it tastes like Christmas in one bite!
Of course, these would be great for any time. If you can’t find candy canes, peppermints would work wonderfully.

Deconstructed Gluten Free No Bake Peppermint Cheesecake
Ingredients
- 8 ounces softened cream cheese
- 1/4 cup heavy cream
- 2 ounces melted white chocolate
- 1/2 cup powdered sugar
- 1/4 cup crushed peppermints or candy canes
- 1/2 cup broken gluten free honeygrams
- whipped cream white chocolate, and crushed peppermint for topping
Instructions
- Beat softened cream cheese and heavy cream together.
- Beat in white chocolate.
- Beat in powdered sugar.
- Fold in crushed peppermints.
- Divide into serving dishes.
- Refrigerate until set or ready to serve.
- Top with gluten free honey grams, whipped cream, white chocolate and crushed peppermint.
