Deli Style Chicken Salad
Not that long ago I was rushing through the airport, trying not to miss my flight and starving. There were quite a few restaurants where I could have gotten something, but there was just no time for that and all the kiosks only had sandwiches, until I ran into one. They had chicken salad by itself and it was gluten free. I was so happy, it tasted delicious, probably because I was so hungry.
When I recently received Schar’s new 10 Grain and Seed Bread, I knew it would be perfect for deli style chicken salad. This isn’t your ordinary chicken salad. It’s chocked full of grapes, apples, and walnuts with lots of seasonings to give it that WOW! flavor. I could seriously eat this every day.
Schar 10 Grains and Seeds Bread
I gotta be honest. Schar is probably my favorite gluten free bread brand. I don’t think I’ve ever had anything from them I didn’t like. We use a lot of their products in various recipes, just because they taste so good and function like their gluten counterparts.
We always have a loaf of their white artisan bread on hand, but this new 10 Grains and Seeds has quickly become another favorite. They use a unique sourdough recipe to create it and it is delicious. Dairy free, non gmo and packed with fiber, it’s an obvious choice. Plus- there is a coupon (I love coupons!)- Get it HERE!
The sourdough bread makes the perfect base for these deli style chicken salad sandwiches. It holds up perfectly, without crumbling and is nice and soft. My gluten eating husband ate almost the entire loaf, it’s that good.
The chicken salad is easy to make, but packed full of flavor. I love adding fruit and nuts for texture. Plus the garlic powder and lemon juice give it that extra zing.
If you want to make this even easier, you can use gluten free rotisserie chicken or any kind of leftovers. I prefer using fresh chicken to canned, but in a pinch, it will work. It’s as easy as mixing it all together and serving on some delicious gluten free Schar 10 Grains and Seeds bread!

Deli Style Chicken Salad
Ingredients
- 2 cups chopped cooked chicken
- 1/2 cup grapes cut in half
- 1/2 cup chopped apples
- 1/3 chopped walnuts
- 1/4 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 2 teaspoon lemon juice
- 1/2 cup mayo
Instructions
- Combine all ingredients. Stir together well.
- Add additional salt and pepper to taste.
