Easy to Make

This gluten free brownie cupcake surprise is so simple to make. The kids can definitely help! I started with a premade gluten free sugar cookie dough. Feel free to make it from scratch, but I am all about the easy. Press the cookie dough into the bottom of each cupcake tin.

The center is a Goodie Girl Birthday Cake Cookie. I love how the frosting is on the inside of the cupcake and not on the top. My daughter would lick the frosting out of every one of these cookies if I let her.

The topping is a quick brownie mix I made. I have a full proof gluten free brownie recipe, that you can actually mix the dry ingredients together ahead and then just add the wet ingredients when you’re ready to mix.

Once the cookies are topped off, I added a few extra sprinkles, because you can never have too many sprinkles.

After they bake, they look beautiful and are so fun to cut into and see that Birthday Cake filling!

Gluten Free Brownie Cupcake Surprise

  • 12 ounces gluten free sugar cookie dough, rolled into 12 balls
  • 12 Goodie Girl Birthday Cookies
    Brownie mix
    Dry Ingredients
  • 1/2 cup gluten-free flour
  • 1/3 cup gluten-free cocoa powder
  • 3/4 Cup Sugar
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp gluten-free instant espresso powder (optional)
    Wet Ingredients
  • 2 eggs (room temperature works best)
  • 1/2 cup coconut oil
  • 1 tsp vanilla


  1. Preheat oven to 350.
  2. Mix together dry brownie ingredients.
  3. Add in wet ingredients.
  4. Mix well.
  5. Line 12 muffin tins with cupcake liners.
  6. Press one ball of gluten free sugar cookie dough into each liner.
  7. Press one Goodie Girl Birthday Cake cookie into each liner.
  8. Top with brownie mixture.
  9. Add sprinkles if desired.
  10. Bake 30-35 minutes or until cooked through.
