Gluten Free Cherry Cheesecake Bars
I absolutely love cheesecake. It’s the kinda dessert I would eat for breakfast. Something about the creamy cheesecake on top of a crunchy graham cracker crust is just irresistible.
The first time I ever made cheesecake was when I was in high school for my dads birthday. It was a traditional cheesecake, and though I remember making a huge mess, it was delicious. Now, any chance I get, I make a cheesecake.
These cheesecake bars are special because of the swirls of Cherry Sauce going through them. It really takes them to the next level.
The Perfect Crust
When I first was diagnosed, I made a cheesecake for Thanksgiving, without a crust. I didn’t even know that gluten free graham crust existed. Schar gluten free honeygrams make the perfect crust.
The gluten free honeygrams work just as you would expect a graham cracker to work. You don’t need to make any adjustments. One package makes just the right amount of crust for an 8×8 or 9×9 square pan.
The bars are so simple to make. Crust, cheesecake mixture, cherry sauce or jam (I use this homemade version!), swirl and bake!
It’s practically impossible to mess up!
Cherries Galore
This summer I have been loving fresh cherries, so I chose to use them as the topping in these gluten free cherry cheesecake bars. I love making my own homemade cherry sauce. It’s simple to do, though if you want super smooth swirls, you will need to pulse it a few time in a blender.
If you don’t want to make your own cherry sauce, then you can use cherry jam or preserves to add your swirls! To get that pretty shape, draw lines of cherry sauce and then take the back of fork or spoon and swirl it around!

August 31, 2018 at 3:04 amI think if I’m gonna be honest my favourite part of cheesecake is the crust! Nothing like the buttery crumbly mess of a good crust. Oh and then pressed into some soft cheesy bits… oh gawd!
