Twist on a Southern Treat
I’ve never met a person who didn’t like banana pudding. It’s one of those desserts that’s just a classic. I remember my grandmother making it as a kid. The creamy pudding and cookies- plus cool whip on top, I loved cool whip. You could almost argue for healthy, because hey, it had bananas right?
There are a hundred and one recipes for banana pudding out there, but basically, they are all pretty similar. Because my hubby has a love for banana pudding and an addiction to chocolate chip cookies I decided to that it would be a great time to combine them!
Chocolate Chip Cookies
We love chocolate chip cookies around here! It may sound a bit strange, but we actually like to freeze them. Forget hot gluten free chocolate chip cookies, there is just something about biting into a cold cookie. Maybe because it’s always a billion degrees in South Florida.
Anyways- Goodie Girl makes out favorite gluten free chocolate chip cookies. My whole family (even the none gluten free ones) love them. The look on my daughter’s face when she saw I had cookies out to make these chocolate chip banana puddings was priceless. It was all I could do to keep her from eating them all. She may or may not have eaten cookies for lunch that day! I barely finished taking pictures before her hand was going after these gluten free chocolate chip banana puddings!
Gluten Free Chocolate Chip Banana Pudding
This is a really simple recipe to make. You can sever it in individual cups or layer it in a square baking dish.
Something that I do that may be a bit different than some banana puddings, is that I add cream cheese to the pudding mixture. I find that it thickens the pudding nicely and it cuts the sweetness just a bit.
The addition of chocolate chip cookies is such a simple switch, but it totally makes this dessert! We like to top it with mini chocolate chips or one of Goodie Girl’s Mini Chocolate Chunk Cookies (they sell these in individual packages- amazing!).
Be sure to go check out all of Goodie Girls great cookies! If you love chocolate chip cookies, you will love this Chocolate Chip Cookie Crusted French Toast as well!
So tell me- what is your absolute favorite dessert?
