The Cupcake Dilemma
Before being diagnosed with Celiac I was never a huge cake person, but after I started craving cupcakes like crazy. I’m guessing this is because I could no longer just go to the store and get one. When I was pregnant it was the worse. I had a huge meltdown one night (pregnancy hormones!) and was so disappointed when all the recipes I found required all kind of ingredients that I didn’t have or couldn’t find.
The search for a good gluten free cupcake was daunting.
There was one cupcake shop at the time that sold a gluten free vegan cupcake, so my husband and I went. They were eh. The cake was dense and the icing way to sweet. While I have since found a couple good gluten free cupcakes in Miami, with the recipe I developed, it is just as easy to make my own. You could even mix up several batches of the dry ingredients for these gluten free chocolate cupcakes and store in ziplocs so you have your own cake mix ready to go at a moments notice!

Gluten Free Chocolate Cupcakes
I’m sure you’re wondering why I have been holding out on such an amazingly delicious, easy gluten free chocolate cupcake for so long. I was just waiting for the right opportunity, and it just so happens that Sharon over at What the Fork has a birthday this week! Recipe Notes
You know I can’t leave you without a couple of recipe notes for these gluten free chocolate cupcakes. It just wouldn’t be fair.
These cupcakes are dairy free (Yay!),
However, I did use cream cheese icing. You can use a dairy free cream cheese and you are good to go!

The key to gluten free baking is an awesome gluten free flour. You can use whatever your favorite Gluten Free Blend is, just avoid bean based for the cupcakes. No one wants to eat a cupcake that tastes like beans.
The Espresso
Feel free to leave out the instant espresso, I just love how it develops a rich, chocolate flavor, but it is optional.

Cupcakes
Ingredients
Cupcakes
- 1 cup Gluten Free Flour
- 1 cup sugar
- 1/2 teaspoon gluten free baking powder
- 1/2 teaspoon salt
- 1/3 cup gluten free cocoa powder
- 1/2 teaspoon gluten free espresso powder optional
- 1/4 cup gluten free mini chocolate chips I use Enjoy Life- gluten and dairy free!
- 1/2 cup coconut oil
- 1/2 cup water
- 2 eggs
- 1 teaspoon vanilla
Cream Cheese Icing
- 1 8 oz package softened cream cheese regular or dairy free
- 1 cup powder sugar
- 1 teaspoon vanilla
Instructions
- Mix together dry ingredients.
- Add wet ingredients and stir until well combined.
- Fold in chocolate chips.
- Using a quarter cup measuring cup, spoon into prepared baking dish.
- Bake for 20 minutes at 350 degrees or until toothpick comes out clean.
- Cool completely.
- Meanwhile, beat together cream cheese, powder sugar and vanilla.
- Frost cooled cupcakes and enjoy!
