Gluten Free Cookie Salad
When I first told my husband I was making Gluten Free Cookie Salad, he looked at me a bit like I had two heads. He was envisioning me somehow making cookie croutons on top of a green salad, but this is not an episode of “Chopped”, there will be no green salad topped with cookies.
Instead, I have a traditional cookie salad, made gluten free. Now cookie salad is the kind of dish that you would take to a potluck. When I was young we lived in Alabama and potlucks were a huge thing there. Whenever there was a 5th Sunday our church would have a massive one. It was my favorite Sunday, so much food. This gluten free cookie salad is exactly what you would expect to find at.
A Little Twist
I had to, of course,give my own little spin to this recipe. Traditionally it is made with mandarin oranges and crushed pineapple. I’m sure it tastes great, but we have been getting the prettiest strawberries in our store lately so I just had to use them. Besides, strawberries, chocolate, whipped topping? It’s a classic combo.
Goodie Girls Fudge Striped Cookies are the perfect gluten free sub for the traditional fudge striped cookies. We love them. They never last at our house. Luckily, I can find them pretty easily now. Walmart, Whole Foods, even our local grocery store Milams carries them. I’ve also started seeing Goodie Girl Cookies pop up on Amazon Fresh (Amazon’s version of InstaCart). There is really no excuse not to try them!
Recipe Notes
A really great thing about this recipe is that you can totally add other spins to it. You could use a different flavor of pudding, or a different type of Goodie Girl Gluten Free Cookie. You could make a mint version with some mint slims, or a cookie and creme version with the chocolate creme cookies. Skies the limit!

Gluten Free Cookie Salad
Ingredients
- 1 box instant vanilla pudding
- 1 8 ounce container whipped topping or homemade
- 1 cup buttermilk
- 1 cup chopped strawberries
- 1 cup chopped gluten free fudge striped cookies
Instructions
- Mix together vanilla pudding and buttermilk.
- Fold in whipped topping.
- Fold in strawberries.
- Fold in crushed cookies just before serving.
- Enjoy!
