Gluten Free Double Chocolate Marshmallow Cupcakes
My local Publix has this great table at the front of the store where they always put clearance items. I always find great deals on items, last week I found some jars of marshmallow fluff (naturally gluten free!). It’s not the kind of thing I usually buy, but I had just got my husband a new blow torch and it was a great opportunity to use it!
I have a great chocolate cupcakes recipe already, I’ve made them with cream cheese icing and red wine buttercream. Always delicious. For this, I adjusted the recipe a bit, and boy are they amazing!
I think the best part (aside from that burnt topping!) of these is that the marshmallows melt inside them, making them gooey inside. It’s a little piece of chocolatey marshmallow heaven.
They are so easy to make, but still something that looks a little fancy!
Recipe Notes
Chocolate Chunks
I used the Enjoy Life Chocolate Chunks. There is something about nice big chunks of chocolate in a cupcake.
Marshmallows
I used mini marshmallows. They do melt into the cupcakes, so aside from a bit on top, you’re not going to see chunks of marshmallow in the cupcake. You will taste the ooey-gooeyness.
Gluten Free Flour
I always use GF Jules, but there are many good ones on the market. Just be sure it includes xanthan gum.
Marshmallow Fluff
Marshmallow fluff is some very yummy stuff. It tastes so good on these cupcakes, really gives them that s’more flavor, however, you will want to add it right before serving as it doesn’t set up like most frostings do.
Blow Torch
Every kitchen should have a blow torch right? At least that’s what my husband thinks, so I got him one for Father’s Day :). We’ve been having a lot of fun playing with it! I used it to toast marshmallows for my Campfire Dessert Bags too!

Gluten Free S’more Cupcakes
Ingredients
- 1 cup Gluten Free Flour
- 1 cup sugar
- 1/2 teaspoon gluten free baking powder
- 1/2 teaspoon salt
- 1/3 cup gluten free cocoa powder
- 1/2 cup coconut oil
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup gluten free chocolate chunks I use Enjoy Life- gluten and dairy free!
- 1/2 cup marshmallows
- 2 cups marshmallow fluff
Instructions
- Whisk together dry ingredients.
- Add wet ingredients.
- Mix well.
- Divide into 12 cupcake cups.
- Add 3 marshmallows, push in and cover with cupcake mix.
- Bake at 350 degrees for 15-18 minutes.
- Let cool.
- Top with marshmallow fluff and brulee.
