I love pizza, I love enchiladas, so it only makes sense to combine them. This gluten free Enchilada Pizza is perfect. So much so, my husband ate basically the whole thing!

Gluten Free Enchilada Pizza
This easy spin on traditional pizza is a snap to make. You only need enchilada sauce (use your favorite!), shredded chicken (leftover is fine!), Mexican style shredded cheese and chopped cilantro.
To add extra flavor I like to mix the chicken with a little bit of the enchilada sauce so that you get the flavor throughout.
If your feeling inspired you could also add some jalapenos, chopped tomatoes or a drizzle of sour cream.

Gluten Free Enchilada Pizza
Ingredients
- 1 cup shredded chicken
- 1/2 cup Enchilada Sauce
- 1 cup shredded Mexican Cheese
- 1 Tablespoon chopped cilantro
- 1 premade gluten free pizza crust
Instructions
- Add 2-3 tablespoons of enchilada to shredded chicken and mix well.
- Spread enchilada sauce on 3 Bakers Pizza Crust.
- Top with shredded Mexican Cheese.
- Add shredded chicken & enchilada sauce mixture.
- Sprinkle cilantro.
- Bake at 400 degrees for 8 to 10 minutes
