Gluten Free English Muffin Breakfast Sandwiches are the perfect breakfast!

I know breakfast is important, but it is the one meal I almost always miss. Mornings are always a bit hectic and by the time I remember to eat it’s usually lunch time.
This month’s American Gluten Free Box had me inspired, though! It was a box full of all kinds of breakfast goodies. There were so many items it was hard to decide what to try first, but the Ener-G Gluten Free English Muffin won! I made this sandwich for my husband, who loves a runny egg.
Gluten Free English Muffin Breakfast Sandwich
Before kids and Celiac diagnoses I used to make the occasion trip to Einstein Brothers Bagels and they had this bagel thin sandwich that had this awesome cream cheese spread, egg, and bacon. It was so good, the flavors are ingrained in my memory. When I saw the seasoning mix from Lake Shore Drive Seasoning I knew I could make an awesome cream cheese spread for the ultimate Gluten Free English Muffin Breakfast Sandwich.
This gluten free breakfast sandwich is a snap to make and easily customizable. The Ener-G Gluten Free English Muffins were nice and soft. They didn’t crumble with the runny egg, bacon and cream cheese. It held together perfectly! My husband was thrilled and has been asking me to make it again.
I really loved this month’s American Gluten Free Box. So many great breakfast options and I love that it’s not just snacks, but real food items that I can use for meals. If you haven’t checked out their monthly subscription, you are missing out!

Gluten Free English Muffin Breakfast Sandwich
Ingredients
- 2 Gluten Free English Muffins
- 2 Eggs Cooked to order
- 4 Slices Bacon
- 4 oz Cream Cheese
- 1 Tablespoon Chive Seasoning
Instructions
- Mix together cream cheese and chive seasoning.
- Spread on toasted English Muffins.
- Assemble sandwich with Eggs and Bacon.
