Gluten free ice cream cone cupcakes are a fun twist on your traditional cupcake!

Gluten Free Ice Cream Cone Cupcakes
When I was little my mom would always make ice cream cone cupcakes for parties. I love the texture of the cupcake and the ice cream cone together. The perfect combo of soft and crunchy.
When I found gluten free ice cream cones on a BOGO sale, I knew it was the perfect chance to see if it would work to make this gluten free. I used the Joy brand (sold at Publix), but they have THESE on Amazon that should work as well.
I’ll be honest, this is more of a tutorial than a recipe, but they were just so much fun I couldn’t help but share!
Quick and Easy
Normally I make everything from scratch, but life has been hectic so I decided to chance it with a box mix. The last gluten free vanilla cake mix I tried was Pamela’s and it was okay, but not great. This time I picked up a box of King Arthur’s gluten free cake mix and I was pleasantly surprised. It is amazing. I like Better Batter’s as well, but they don’t sell that at Target.
I actually had enough cupcake batter to make the 12 ice cream cone cupcakes and 24 mini cupcakes that I took to work and my daughter’s school. They were a hit with everyone, even my husband kept sneaking them when I wasn’t looking!
Gluten Free Ice Cream Cone Cupcake How To
The trick to making these is to use foil over your cupcake tin and then make holes so that gluten free ice cream cones fit into it standing up. You don’t want them to fall over. I really should have taken a picture, but I completely forgot. Next time!
Fill the cones up about to the line where the cone becomes bigger at the top, approximately 2/3 (just like if you were making regular cupcakes) and bake according to your mix directions. I was afraid the cones would burn, but they don’t.
Then just add your favorite frosting- again, I bought it. There are several gluten free brands that are all pretty good. Feel free to make your own if you have time.

Gluten Free Ice Cream Cone Cupcakes
Ingredients
- 1 box gluten free ice cream cones
- 1 box gluten free cupcake mix prepared according to package directions
Instructions
- Cover cupcake pan with foil and make a hole for each ice cream cone.
- Fit gluten free ice cream cones carefully into pan.
- Fill 2/3 of each cone with gluten free cake mix.
- Bake according to cupcake mix directions.
- Decorate and enjoy!
