Love Thy Neighbor

Currently, I am teaching my daughter about what it means to be a good neighbor (cue the theme song from Mr. Rogers). It’s not easy. I want to wrap her up in a little bubble and never let her talk to anyone, but that’s not how I want her to live life.
The other day, I was discussing this with a friend, telling her how my daughter gets so excited when we see neighbors. I told her that I was going to try to start reigning her in a bit. Try to keep her from being quite so friendly, but then conviction hit.
We were at a great women’s meeting with Jen Hatmaker (totally recommend her book Of Mess and Moxie) and the first thing she spoke about was what we have been commanded to do as a Christian- Love God, and love thy neighbor. You might as well have hit me on the head with a book. (Obviously, this is within the confines of keeping her safe.)
It’s not about reigning her in, it’s about teaching her how to love thy neighbor and for where we are right now, that means taking treats to people in our building. As she grows older this will change, but for now it’s a great place to start.
I gotta be honest. Sometimes I’d rather not be neighborly. It is not in my “raised in Miami” nature to be friendly to random people. I’m not a mean person, but we don’t talk to people in elevators, let alone go knock on their door with a plate of cookies, but that’s what we are doing.
It’s personally challenging, but it’s amazing to see the smiles on peoples faces when they receive something they completely don’t expect. So for this season, as I’m trying to teach my child what it means to love thy neighbor by talking to people in the hall (even when I just want to get home) and making Gluten Free Marshmallow Popcorn Treat Bars. You never know if that person you walk by every day might just need a little bit of love.
Gluten Free Marshmallow Popcorn Treat Bars
These are so easy to make! Often my daughter helps me with them. Sometimes I even use store-bought popcorn to make them even quicker!
I love adding some white chocolate to the melted marshmallows for a bit of extra sweetness.
If you want to make this dairy-free, you can easily use dairy-free butter. To make it vegan Dandies marshmallows are great!

Gluten Free Marshmallow Popcorn Treat Bars
Ingredients
- 8 cups popped popcorn
- 4 cups miniature marshmallows
- 3 tablespoons butter or dairy free butter alternative
- 2 ounces white chocolate
Instructions
- Melt butter in large saucepan over medium heat.
- Add marshmallows and white chocolate.
- Stir until melted.
- Remove from heat.
- Add popcorn and stir until combined.
- Press into lightly greased 9x13 pan.
- Cool and cut.

Back in Texas and now Oklahoma, everyone waves, says “hi” and smiles at one another, even if you’re a stranger. Not the case when we lived in Maryland. I remember smiling at someone and they gave me the “death glare”. But you are so right, everyone deserves an extra act of kindness. If only everyone took that step.
