Gluten Free Mexican Breakfast Sandwich
Sandwiches are the ultimate comfort food and this particular sandwich transports me in time, back to a village in the mountains of Mexico. I spent a lot of time in the Sierra Madre mountains when I was in highschool. One particular trip, a friend and I were determined to eat our way through mountains.
We went into a sandwich shop (if you could call it that, it was the only restaurant like place there) and I had the best sandwich I had ever eaten. Beans, sausage, cheese. It was heaven in my mouth, and the inspiration for this Gluten Free Mexican Breakfast Sandwich- just in time for Cinco de Mayo.
Three Bakers Gluten Free Bread
When you’re stacking a sandwich as high as this gluten free Mexican sandwich, you need a sturdy bread that won’t crumble. Three Bakers Sandwich bread was definitely up to the challenge! I added refried beans, chorizo, avocado, salsa, fried egg and cheese without it getting soggy or falling apart.
Recipe Notes
I know, I know, it’s a sandwich. How many recipe notes can there be? Not a lot, but there are still a few.
- First, make sure your butter is soft before you spread it or you will rip your bread. If you are going to be making a lot of breakfast sandwiches, try the technique used HERE for making a whole tray of grilled sandwiches at one time!
- Secondly, the chorizo is much less messy as a patty versus crumbled. We tried it both ways and while the crumbled is just as tasty, it is a bit of a mess and you want your gluten free Mexican breakfast sandwich to stay together.
- Thirdly, put the salsa inside the avocado slices, like you see demonstrated in the video above. It will keep it from leaking out when you flip it!

Gluten Free Mexican Breakfast Sandwich
Ingredients
- 2 slices gluten free bread
- 4 ounce chorizo patty cooked
- 1 fried egg
- 1/4 cup refried beans
- 2 Tablespoons salsa
- 2 slices avocado
- 1 slice cheese
- 1/2 Tablespoon butter
Instructions
- Butter one side of each of the bread slices.
- Spread refried beans on non-buttered bread side.
- Layer chorizo, avocado, salsa, egg and cheese.
- Close sandwich.
- Grill for about 3 minutes per side.
