A Mexican Love Affair
I love Mexico…not the Cancun Mexico, but the mountains. The small villages. The people. In high school and college, I spent a lot of time in Zacoapoxtla and Puebla. It was my home away from home. Given the opportunity (and if I could get my husband on board), I would move in a heart beat.
My love for Mexico didn’t start in high school, my parents were very purposeful in introducing us to other cultures when we were growing up. Whether it was having something different for dinner or having missionaries from around the world stay at our house, I was exposed to culture constantly.
When I a was little one of the desserts my mom would serve whenever we had company over was this Mexican Torte. It was so simple, but everyone loved it. The original recipe came from The Sunset Mexican Cookbook (Copyright 1976!) and she tweaked it a bit over the years. Now I’ve tweaked it more to make it gluten free!
Gluten Free Mexican Dessert Torte
This dessert is so easy. The trick to making it gluten free is to have gluten free tortillas. I make my own using GF Jules Recipe and flour. It is really easy, but there are also several brands of gluten free tortillas on the market.
Recipe tips:
Dairy Free Option- By using Enjoy Life Chocolate and a Dairy Free Sour Cream (Check out all these alternatives on Go Dairy Free), this can easily be made to suit guests with an aversion to dairy.
Chocolate Shavings- Use a chilled, not frozen chocolate bar. It is to cold it breaks, and if it is to warm it smushes.
Chill Time- Make sure you make it a couple hours prior to serving, it does need a couple hours to chill.
