The Dessert Time Dilemma

I have a problem. I’m great at making sure dinner is ready when company comes over, but I always forget about dessert. Even if I do remember, chances are it won’t come out like I wanted it (you should have seen the ice cream cake failure…I’ll get it right one day!) or I just don’t have the ingredients on hand.

Enter Midnight Brownie Cookie Parfait. It is the ultimate dessert. Minutes to put together and you can not possibly ruin it. My 2 year old could make this!

Midnight Brownie Goodie Girl Cookies

We are huge Goodie Girl Cookie fans at this house, mainly because they are just amazing. If the package didn’t say gluten free, you would never know. Midnight Brownie is one of our favorites. I always keep a bag on hand for my little one. She loves them.

When I first got the bags to bake these cookie parfaits, you shoulda seen the excitement on her face. She thought all the cookies were for her. I may have to order a few more bags. Midnight Brownie Cookies are on sale this month on the Goodie Girl website. Double chocolate cookies make my little one very happy.

Gluten Free Midnight Brownie Cookie Parfait

These parfaits can be super simple or you can get a little complicated. They have 3 basic ingredients:

  • Chocolate Pudding
  • Midnight Brownie Goodie Girl Cookies
  • Whipped Topping

You could totally make pudding from scratch or a box, but you could also buy those little snack packs that you put in your kid’s lunch boxes. No one will judge, especially if they don’t know.

The Midnight Brownie Goodie Girl Cookies can be bought at several stores or order them online! When you order a regular sized bag be sure to grab some go bags too! Add one on top for decoration or keep a bag in your purse for when that chocolate craving hits!

I did actually make my whipped topping from scratch. I take 1 cup heavy whipping cream and 2 tablespoons sugar and whisk them with my hand blender until stiff peaks form. Cool whip or even So Delicious Coconut Whipped Topping work perfectly as well, I just happened to already have some heavy cream on hand (Trader Joe’s sells shelf stable whipping cream, I love to keep it on hand so I always have it for whatever I’m cooking,).

That’s it. These parfaits don’t get any easier and they are amazing! You could even throw a layer of sunbutter in their if you were feeling feisty.

Ingredients

  • 1 Package Midnight Brownie Goodie Girl Cookies
  • 1 Cup Chocolate Pudding or more if you like
  • 2 Cups Whipped Cream

Instructions

  • Prepare pudding if not using pre-made.
  • Prepare whipped topping if not using pre-made.
  • Crush Cookies. Leave a few chunks.
  • Layer pudding, whipped topping and cookies into cup.
  • Enjoy!
