Summer Treats
It’s just not summer without ice cream. I always loved when the ice cream maker was taken out when I was a kid. There is nothing like homemade ice cream. As an adult, I wish I could give my daughter the same experience, but we just don’t have space for a clunky ice cream maker.
Someday I may buy an attachment for my Kitchen Aide, but until then, no churn ice cream is the way to go.
It’s so easy that my 3 year old was able to help! It only has two main ingredients, plus whatever mix in you want!
Easy, Peasy, No Churn Ice Cream
For this gluten free, no churn ice cream I started with chopped up Goodie Girls Chocolate Creme Cookies. These cookies taste just like I remember Oreos tasting, but of course, they are gluten free and are also made in a peanut free facility. You can buy them in boxes or snack packs.
I love the snack packs! For this recipe, you will need 2 snack packs or 16 cookies.
You take all these crushed up cookies and add them to your no churn ice cream mixture. The no churn mixture is made up of whipped heavy cream and condensed milk.
Once the gluten free no churn cookies and cream ice cream is all mixed together it goes into the freezer for a few hours or overnight. So simple.

Gluten Free No Churn Cookies and Cream Ice Cream
Once it is out of the freezer, all that’s left is to scoop up the goodness! I chose to use a metal pan for freezing so that it wouldn’t melt to fast when I pulled it out of the freezer.
This is my first experience with no churn ice cream and it won’t be my last. Any of Goodie Girl’s cookies would be great in this base. You can mix and match to your heart’s content!

Gluten Free No Churn Cookies and Cream Ice Cream
Ingredients
- 2 cups heavy whipping cream
- 1 14 ounce can sweetened condensed milk
- 16 gluten free chocolate creme cookies chopped
Instructions
- Whip heavy cream with hand or stand mixer until stiff peaks form.
- Carefully fold in sweetened condensed milk.
- Fold in chopped gluten free chocolate creme cookies.
- Scoop into metal bread loaf pan.
- Freeze for 3 hours to overnight.
- Serve and Enjoy!
