Everyone knows that breakfast is the most important meal of the day, but I’ll be honest, it’s the one I usually skip. Mornings are always hectic getting everyone ready for the day and out of the house. I’m lucky to get dressed, let alone eat breakfast.

I’ve been hearing all the hype about overnight oats for a while now, but the idea of just leaving something in the fridge overnight to soak up milk just seemed a little strange. Then I realized I could use it as an excuse to eat cookies for breakfast and decided to give it a shot.

Oatmeal Raisin is one of my favorite kinds of cookies. I love the crunchiness and the sweet raisins inside. The hint of cinnamon always has me coming back for second cookie.

Not all Oatmeal Raisin cookies are created equal, especially for those with Celiac Disease. Oats are one of those tricky items that can be easily contaminated, so it is really important to make sure your cookies (and oatmeal!) are gluten free. Goodie Girl makes my favorite Oatmeal Raisin Cookie on the market. They are crispy with just the right amount of sweetness (and they are on sale this month!). They make the perfect topping to Oatmeal Cookie Overnight Oats. The creamy oats need the crispiness of the oatmeal cookie.

After I realized how easy overnight oats are to make, I am going to be making them all the time!

Now, instead of just making one serving at a time, I found it easier to mix up four and divide the oatmeal cookie overnight oats among four half-pint mason jars. It takes the same amount of time and I have breakfast for several days.

I used vanilla yogurt and some brown sugar for sweetness, but if you are looking to cut back on sugar, you could easily use plain yogurt and no sugar. The cookie will still add some sweetness and the cinnamon gives tons of flavor!

Gluten Free Oatmeal Cookie Overnight Oats

Ingredients

  • 1 1/3 cups certified gluten free oats
  • 1 1/3 cups milk
  • 6 ounce cup vanilla yogurt
  • 1/2 teaspoon cinnamon
  • 2 Tablespoons brown sugar
  • 4 Oatmeal Raisin Cookies (Goodie Girl Oatmeal Raisin

Instructions

  • Combine oats, milk, yogurt, cinnamon, and brown sugar in a bowl.
  • Stir well.
  • Divide among 4 half pint mason jars.
  • Place in refrigerator over night.
  • Crumble one oatmeal cookie over each jar before eating.

    I never miss breakfast anymore but when I was in high school and college I never at breakfast. I just tried overnight oats for the first time as well! I finally jumped on board the train and I loved them. Topping overnight oats with oatmeal cookies is a genius idea that I absolutely love!

    Oatmeal is one product that can be mixed with gluten products. I agree that we need to be careful when purchasing oatmeal for gluten sensitive people. The crunch in the recipe is making me crave for some right now.

    Haha I admit that the first time I made overnight oats I didn’t like the idea of cold oats but it ended up being like a breakfast parfait. And heck any excuse to have cookies for breakfast is fine by me too.
