As soon as September 1st hits, pumpkin spice pops up everywhere. I’m no stranger to pumpkin spice (hello gluten free pumpkin spice cake pops!), but of course, like most people, I don’t always have time to make an entire cake when the craving hits.

That is where this easy gluten free pumpkin spice mug cake comes in. So easy to make and can be done from start from finish it less than 10 minutes.

As a matter of fact, it’s so easy a three year old can almost do it! We did lose a few eggs to the floor, but overall she loved it! Of course, it may just have been because she could eat Enjoy Life Chocolate Chips!

My toddler has become somewhat of a chocolate snob. I used to be able to get away with giving her any brand of chocolate (I’m not ashamed…I bribe my child), but over the past few months, she has decided she will only eat the Enjoy Life Chocolate and I am definitely okay with that!

Gluten Free Pumpkin Spice Mug Cake with Chocolate Chips

Ingredients

  • 1/4 cup gluten free flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon pumpkin spice
  • 2 Tablespoons sugar
  • 1 egg
  • 1 Tablespoon melted butter let cool before mixing
  • 2 Tablespoons milk
  • 1/3 cup pumpkin
  • 2 Tablespoons chocolate chips

Instructions

  • Mix together dry ingredients.
  • Add wet ingredients and mix well.
  • Fold in chocolate chips.
  • Microwave for 4 minutes.
  • Enjoy!

    Pumpkin spice isn’t really a thing here but we now have a Starbucks so I got to taste a Pumpkin Spice latte 🙂 I would like to try baking with it more though.

    This mug cake looks like comfort food to me! In Autumn I love spice cake and anything with maple and cinnamon. I recently tried spice cake with chocolate ganache and that was a great combo!

    I love anything and everything pumpkin! Muffins, quickbreads, pancakes, etc, or even brownies – while others sub apple sauce for oil or water, I sub in canned pumpkin!
