Pumpkin Spice and Everything Nice
As soon as September 1st hits, pumpkin spice pops up everywhere. I’m no stranger to pumpkin spice (hello gluten free pumpkin spice cake pops!), but of course, like most people, I don’t always have time to make an entire cake when the craving hits.
That is where this easy gluten free pumpkin spice mug cake comes in. So easy to make and can be done from start from finish it less than 10 minutes.
As a matter of fact, it’s so easy a three year old can almost do it! We did lose a few eggs to the floor, but overall she loved it! Of course, it may just have been because she could eat Enjoy Life Chocolate Chips!
Enjoy Life Foods Chocolate Chips
My toddler has become somewhat of a chocolate snob. I used to be able to get away with giving her any brand of chocolate (I’m not ashamed…I bribe my child), but over the past few months, she has decided she will only eat the Enjoy Life Chocolate and I am definitely okay with that!
We buy the big bags for baking and the mini bags for snacks and to keep in my purse for when I need something to keep my little one occupied!

Gluten Free Pumpkin Spice Mug Cake with Chocolate Chips
This mug cake is perfect for those pumpkin spice cravings. It’s simple to make and checks all the boxes- pumpkin spice and chocolate.
Eat it in the morning for breakfast, an afternoon snack or late night snack. It works any time of day!

Gluten Free Pumpkin Spice Mug Cake with Chocolate Chips
Ingredients
- 1/4 cup gluten free flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon pumpkin spice
- 2 Tablespoons sugar
- 1 egg
- 1 Tablespoon melted butter let cool before mixing
- 2 Tablespoons milk
- 1/3 cup pumpkin
- 2 Tablespoons chocolate chips
Instructions
- Mix together dry ingredients.
- Add wet ingredients and mix well.
- Fold in chocolate chips.
- Microwave for 4 minutes.
- Enjoy!
