Gluten Free Waffles

Just in case you were wondering if it is possible to have a better breakfast than a plate full of gluten free waffles, it is. Adding cookies and sprinkles make it the best breakfast ever. Just ask my 4 year old. Life is always better with sprinkles.

Birthday Cake Cookies

Goodie Girl totally understands that life is better with sprinkles, which is why their Birthday Cake cookies are jam-packed with them!

They also make their gluten free sandwich cookies in Vanilla Creme and Chocolate Creme. Honestly, you can’t go wrong with any of them in these fun waffles. Just in case you can’t find your favorite flavor locally, they are also available on the Goodie Girl site and Amazon (hello Prime shipping!)

Gluten Free Rainbow Cookie Waffles

How can we make waffles that already have cookies and sprinkles any more fun? Rainbow whipped cream. Honestly, rainbow whipped cream will make any day feel like a party. Just a few drops of your favorite coloring and you will have totally taken these gluten free rainbow cookie waffles up a notch.

Recipe Notes

These are so fast and easy to make and of course I have a few tricks up my sleeve to make them even easier!

  • Use a pre-made waffle mix. We do make waffles from scratch (I got a recipe for you here!), but a lot of times I’ll use Gluten Free Bisquick or King Arthur baking mix. Trader Joe’s also makes one that I like.
  • Let your kids help crush the cookies and pour the sprinkles! My daughter loves helping and these are perfect jobs for her.
  • I love my Belgium waffle maker, but more often I pull out the mini one from Dash that you see in the video. The waffles are just the right size and cook really fast!

These gluten free Rainbow Cookie Waffles are perfect for celebrating! What have you been celebrating lately?

Happy Gluten Free Eating!
