Gluten free roasted cauliflower soup is a delicious way to sneak veggies into your dinner!
Cauliflower Time!
Cauliflower is one of my favorite veggies. So often over looked, it is packed with nutrients and full of flavor. My favorite way to eat it is roasted (though I have been known to eat it raw with a bit of dill dip!).
It’s just about to hit the time of year where cooler nights lead to soup cravings. This roasted cauliflower soup is easy to prepare and tastes amazing! The roasted cauliflower really takes the flavor to another level.

101 Ways to Eat Cauliflower
Ok- so maybe not a 101 ways, but there are lots of ways to prepare it. Lately, it’s been used as a substitute for rice and to make pizza crusts. I like in a pizza crust, not such a big fan of riced cauliflower, but it may grow on me.
As I mentioned, my favorite way is to roast it. Toss it with a little bit of olive oil, salt, and pepper and throw it in the oven around 450 for about 20 minutes (depending on your oven).
Roasting it brings out an amazing flavor, that translates into a perfect soup. I love using roasted cauliflower in this soup. It lends to a creamy texture and really ups the nutrient content.
Gluten Free Roasted Cauliflower Soup
When working on this soup, I started with my clam chowder recipe, and just began making adjustments to get it where I wanted it.
Of course, there had to be some bacon involved, but if you like to live life on the vegetarian side you can leave it out.
Notes:
- I used an immersion blender which will still leave a few chuncks. If you want a completely smooth soup or don’t have an immersion blender, transfer to a blender.
- I like to use the gold potatoes in this soup. I think they have a better texture. Feel free to leave the skins on
- I couldn’t resist adding some cheese, but that’s totally up to you!

Gluten Free Roasted Cauliflower Soup
Ingredients
- 4 pieces of bacon cooked with oil reserved
- 1 small onion finely chopped
- 2 celery stalks finely chopped
- 4 cups diced potatoes 1/2 inch cubes
- 2 cups chicken broth
- 1 cup milk
- 1 head already roasted cauliflower
- salt and pepper to taste
Instructions
- Cook bacon.
- Reserve 2 tablespoons bacon grease.
- Saute chopped onion and celery in bacon grease until translucent (3-5 minutes).
- Add chicken broth and milk.
- Bring to simmer.
- Add potatoes.
- Cook until almost tender, about 15 minutes.
- Add roasted cauliflower and cook an additional 5-10 minutes.
- Puree with immersion blender.
- Add salt and pepper to taste.
- Top with shredded cheese and bacon.
