Gluten Free Roasted Cauliflower Soup

Gluten free roasted cauliflower soup is a delicious way to sneak veggies into your dinner!Gluten Free Roasted Cauliflower Soup

Cauliflower Time!

Cauliflower is one of my favorite veggies. So often over looked, it is packed with nutrients and full of flavor. My favorite way to eat it is roasted (though I have been known to eat it raw with a bit of dill dip!).

It’s just about to hit the time of year where cooler nights lead to soup cravings. This roasted cauliflower soup is easy to prepare and tastes amazing! The roasted cauliflower really takes the flavor to another level.

This month some fellow blogger friends and I decided to feature this often forsaken vegetable and bring you some amazing recipes. Be sure to check out their great recipes at the end of this post!

gluten free roasted cauliflower soup101 Ways to Eat Cauliflower

Ok- so maybe not a 101 ways, but there are lots of ways to prepare it. Lately, it’s been used as a substitute for rice and to make pizza crusts. I like in a pizza crust, not such a big fan of riced cauliflower, but it may grow on me.

As I mentioned, my favorite way is to roast it. Toss it with a little bit of olive oil, salt, and pepper and throw it in the oven around 450 for about 20 minutes (depending on your oven).

Roasting it brings out an amazing flavor, that translates into a perfect soup. I love using roasted cauliflower in this soup. It lends to a creamy texture and really ups the nutrient content.

When working on this soup, I started with my clam chowder recipe, and just began making adjustments to get it where I wanted it.

Of course, there had to be some bacon involved, but if you like to live life on the vegetarian side you can leave it out.

Notes:

  • I used an immersion blender which will still leave a few chuncks. If you want a completely smooth soup or don’t have an immersion blender, transfer to a blender.
  • I like to use the gold potatoes in this soup. I think they have a better texture. Feel free to leave the skins on
  • I couldn’t resist adding some cheese, but that’s totally up to you!

I love bacon on my soup, but if you are looking for a Vegan Bacon Alternative, you have to check out this article for my friend over at the Salted Plains on How to Make Vegan Mushroom Bacon. If you are looking for other veggie based soups, this Creamy Vegan Sweet Potato Soup from Salted Plains is sure to hit the spot!

This sounds lovely. I agree with you that roasted cauliflower is the way to go. And I imagine it really adds some depth tot he soup. I’m going to try to make this dairy free with soaked and pureed cashews instead of milk!
