Thanksgiving Leftovers
Thanksgiving is a wonderful time to gather with friends and family, but let’s be honest. The leftovers are one of the best parts.
My husband actually asks for an extra turkey, just so we can use it in leftover recipes, like this Peruvian Turkey Soup. So good, but one can only eat so much soup and I’m always looking for new ways to use up Thanksgiving leftovers. This Gluten Free Turkey Pot Pie with a Stuffing Crust is a new favorite.
It is so good in fact, you may find yourself cooking extra stuffing, just so you can make it!
Gluten Free Stuffing
I have certain things I like to make from scratch, like my Easy Gluten Free Brined Turkey (it will be the best turkey you ever had), but then I like to use products like Three Baker’s Gluten Free Stuffing Mix to make my life a little easier.

Gluten Free Turkey Pot Pie with Stuffing Crust
This pot pie is so good and so easy. It starts with your basic pot pie filling, but I use leftover turkey and add in some extra fresh herbs to complement the stuffing.
Because I brine my turkey (the full recipe is HERE and you will LOVE it!), it adds a whole depth of flavor. If you don’t be sure to taste it to make sure there is enough salt. Nothing worse than an unsalted dish.
But what if I don’t have turkey? It’s ok, you can use chicken. It will still be delicious!
I used mix vegetables, but you can use any veggies you have on hand. This is a really great dish for using up all the Thanksgiving leftovers that are in your refrigerator.

Gluten Free Turkey Pot Pie with Stuffing Crust
Ingredients
- 2 TBS butter
- 2 cloves garlic chopped
- 1 small onion chopped
- 2 cups frozen vegetables thawed
- 2 cups shredded turkey or chicken
- ⅓ cup gluten free flour
- 2 cups gluten free turkey broth or chicken broth
- 1 tsp chopped rosemary
- 1 teaspoon chopped thyme
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup milk
- ½ package Three Baker’s Gluten Free Stuffing prepared
- *additional salt and pepper to taste
Instructions
- Melt butter in a saucepan over medium heat.
- Add chopped garlic and chopped onion. Saute 3 minutes or until it begins to become transparent.
- Mix in vegetables.
- Mix in the turkey.
- Stir in gluten free flour.
- Add chicken broth and stir.
- Add in rosemary, thyme, salt and pepper.
- Let simmer for 5 minutes.
- Turn off heat and add in milk.
- Stir to combine.
- Ladle into 4 ramekins and top with gluten free stuffing.
- Bake for 15 minutes or until the top is crispy and the pot pie filling begins to bubble.
