Mango Coconut Creamsicles- Creamy mango popsicles with a hint of coconut and just the right amount of sweetness.
Mango Season
Mango season is just starting here in South Florida. Before long the mango trees will be heavy with ripe, sweet mangoes. Where all over the United States kids are running summer lemonade stands, here you will see kids standing by the road selling buckets of mangoes. By the end of the summer everyone will have eaten their weight in mangoes.
Cool off with creamy mango coconut popsicles! A #glutenfree and #dairyfree treat the whole family will love! Share on XMangoes have so many uses, both sweet and savory. Salsas, smoothies, roasted. They are a bit of a pain to peel, but the taste of a fresh mango is worth the effort.
Mango Coconut Creamsicles
With the Miami heat, you need something to cool you off on sweltering day. I wanted to make something that was creamy, but avoided dairy. Coconut milk has all the flavor, without having to add a lot of sweetener. The first batch of these I made I actually didn’t add any sweetener to and they were a hit. About half the people who tried them thought they were perfect just the way they were, the other thought it needed just a tad more sweetness.
Of course a lot depends on how sweet your mangoes are. While most are pretty sweet, occasionally you get one that is still to green. (If you do happen to get one that is to green, try eating it with a bit of lime juice, salt and a pinch of chili powder 🙂 )
The Secret Ingredient
While sweetness is definitely a manner of preference, I still thought they were missing something to bring it them to the next level. Turns out my hubby had the answer. Lime juice. Just a little bit elevates the flavor from tasty to awesome.Â
Quick and Easy
Now, if you don’t have access to fresh mangoes, you can always buy frozen mango chunks or frozen mango puree. These popsicles whip up in a snap and are perfect for adults and kiddoes alike. They are a healthy treat that you won’t mind letting your child have two of!
If you don’t have popsicle molds, you can always use small paper cups or even ice cube trays. I whipped up a batch for my teething toddler using one of our ice cube trays and she was a very happy camper! Here is a very rare pic of my little Boogie, enjoying her popsicles.Â
Stay cool and enjoy these Mango Coconut Creamsicles!
