Lomo Saltado, Peruvian Stir Fry

Ingredients

  • 1 teaspoon garlic
  • 1 Tablespoon red wine vinegar
  • 2 Tablespoons tamari gluten free soy sauce
  • 2 Aji Amarillo Peppers sliced into thin strips
  • 1 medium onion sliced
  • 1 medium sized tomato cut into 8 chunks
  • 12 ounce steak cut into strips such as sirloin or ribeye
  • salt & pepper
  • 1 bag gluten free steak fries cooked according to package instructions
  • 1 cup cooked rice
  • Cilantro for garnish

Instructions

  • Add tablespoon oil to pan
  • Salt and pepper steak
  • Brown quickly over medium heat.
  • Remove steak and juices from pan set aside.
  • Wipe clean with paper towel.
  • Add tablespoon oil.
  • Add garlic, onions toast for 2-3 minutes.
  • Add tomatoes, cook for 2-3 minutes.
  • Add Tamari (gluten free soy sauce) and red wine vinegar. Stir to combine.
  • Add back steak, stir to combine.
  • Serve over french fries with a side of rice.
  • Garnish with cilantro.
