Heat the oil in a saucepan with high sides. Add a sheet of seaweed (or kale if using) allowing it to deep-fry for about two minutes or till crispy.
Using tongs or a slotted spoon, remove seaweed and allow to drain on paper towels.
Repeat with the other seaweed sheets.
Turn off the heat and remove the excess oil from the pot.
Carefully break the seaweed sheets into chip sized pieces.
Add back to the pot and toss with powdered spice, sugar, and salt till well combined.
Put it in a serving bowl, serve it and enjoy!
