Summer Veggie Zoodles with Red Pepper Lemon Vinaigrette

Ingredients

Red Pepper Lemon Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 teaspoons red pepper
  • 1 teaspoon dried onion flakes
  • 1/2 teaspoon salt

Herbed Ricotta

  • 1/4 cup ricotta cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Veggies

  • 1 zuchinni zoodled
  • 2 squash zoodled
  • cherry tomatoes halved

Instructions

  • Mix all dressing ingredients together in a jar. Shake will.
  • Mix herbed ricotta ingredients.
  • Toss zoodles and tomatoes with 1- 2 Tablespoons vinaigrette.
  • Top with herbed ricotta.
