Gluten Free Chicken Pot Pie Muffin

Ingredients

  • 1 1/2 cups gluten free baking mix such as Bisquick or King Arthur
  • 1 cup milk
  • 2 eggs
  • 4 tablespoons butter melted
  • 1 cup chopped chicken
  • 1 cup frozen mixed vegetables
  • 1 package full flavor foods chicken gravy mix
  • 1 1/4 cup milk

Instructions

  • Preheat over to 350 degrees.
  • Mix together gluten free making mix, 1 cup milk, eggs, and melted butter.
  • Prepare chicken gravy mix as directed with remaining milk.
  • Add chicken and vegetables.
  • Cook an additional 3-5 minutes or until frozen veggies are warmed through.
  • Grease 12 cup muffin tin.
  • Place 1 tablespoon baking mix mixture in each cup.
  • Divide chicken filling among cups.
  • Cover with with remaining baking mix.
  • Bake for 20-25 minutes.

Notes

Feel free to brush a little melted butter mixed with garlic powder on top during the last 5 minutes of baking.
