There is a new gluten-free baking company in town. When I was contacted by Miami is Kind, I was very excited. There are not a lot of gluten-free bakeries in Miami, and macaroons are delicious! Once I learned more about the bakery, my excitement grew. Founder Silvia Planas-Prats is out to do more than provide the world with delicious, gluten-free macaroons. She is out to create a social revolution by providing opportunities for young adults with autism and other disabilities to hold gainful employment.
Silvia is originally from Spain and relocated to Miami to find better opportunities for her son, who has autism. After fighting her way through the education system to give him the best opportunities available, she realized that once he left the education system, there were little to no opportunities for him.
