DIY Gluten Free Ice Cream Sandwich {Gluten & Dairy Free!}
Ingredients
Brownie Layer
Dry Ingredients
1/2
cup
gluten-free flour
1/3
cup
gluten-free cocoa powder
3/4
Cup
Sugar
1/4
tsp
salt
1/4
tsp
baking powder
1
tsp
gluten-free instant espresso powder
optional
Wet Ingredients
2
eggs
room temperature works best
1/2
cup
coconut oil
1
tsp
vanilla
Ice Cream

Dairy Free Ice Cream
Instructions
Brownie
Preheat oven to 350 degrees
Mix together dry ingredients.
Add wet and stir well.
Cover cookie sheet with parchment paper.
Spread brownie mixture in thin layer.
Bake for 10 minutes, turning half way through.
Ice Cream
Let ice cream soften for about 10 minutes.
Cover a small pan with parchment paper (about half the size of your brownie layer)
Spread softened ice cream.
Place in freezer to harden.
Prepare Gluten Free Ice Cream Sandwiches
Let brownie layer cool.
Cut in half.
Carefully remove ice cream and place on top of cookie layer. Cover with second layer.
Carefully cut into individual sandwiches.
Wrap in plastic wrap and freeze.
