Ingredients

cup
sugar
1/2

softened butter or non dairy butter substitute
such as Earth Balance Sticks

eggs

mashed banana
1/2

buttermilk

baking soda

all purpose gluten-free flour
plus 2 and 1/2 tsp xanthan gum if your flour does not already include it
Instructions
Preheat oven to 350
Lightly grease pans
Combine vinegar and milk. Allow to sit for 5 minutes.
Cream together butter and sugar.
Stir in eggs, vanilla, banana and milk.
Add baking soda, salt, and flour. Mix well.
Pour into individual baking dishes.
Bake for about an hour or until toothpick comes out clean in center.
Notes
Buttermilk can be made by using 1 teaspoon white vinegar or lemon juice and enough milk to make 1/2 a cup.
