Fun and Festive Banana Bread

These mini Gluten free banana bread loafs make great gifts and freeze well!

Ingredients

  • 1 cup sugar
  • 1/2 cup softened butter or non dairy butter substitute such as Earth Balance Sticks
  • 2 eggs
  • 1 cup mashed banana
  • 1/2 cup buttermilk see note to make your own
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups all purpose gluten-free flour plus 2 and 1/2 tsp xanthan gum if your flour does not already include it

Instructions

  • Preheat oven to 350
  • Lightly grease pans
  • Combine vinegar and milk. Allow to sit for 5 minutes.
  • Cream together butter and sugar.
  • Stir in eggs, vanilla, banana and milk.
  • Add baking soda, salt, and flour. Mix well.
  • Pour into individual baking dishes.
  • Bake for about an hour or until toothpick comes out clean in center.

Notes

Buttermilk can be made by using 1 teaspoon white vinegar or lemon juice and enough milk to make 1/2 a cup.
