Gluten Free Brownie Cups

Servings: 24 mini cups
- 1 cup gluten free flour
- 3/4 cup sugar
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup vegetable or coconut oil
- Perfectly Free Frozen Bites or other ice cream
Preheat oven to 350 degrees.
Mix together dry ingredients.
Add eggs, vanilla, and oil.
Stir well.
Place heaping tablespoons in mini muffin pan.
Press down centers using back of tablespoon.
Bake at 350 degrees for 12-15 minutes.
Let cool 5 minutes before removing from pan.
After completely cooled, add frozen bites or ice cream.
