Chicken Parmesan
- 1 lb chicken cutlets 4 pieces
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup gluten free flour
- 1/4 cup grated parmesan
- 1 cup gluten-free seasoned bread crumbs
- 2 eggs beaten
- 1 cup marinara sauce
- 8 ounces mozzarella cheese sliced
Gluten Free Chicken Parmesan
Preheat oven to 400 degrees.
Sprinkle chicken with salt and pepper.
Mix together seasoned bread crumbs and grated parmesan.
Dip chicken cutlets in gluten free flour, egg, and then seasoned bread crumbs/parmesan.
Bake chicken at 400 degrees for 8 to 10 minutes or until cooked through.
Top chicken with tomato sauce and sliced mozzarella cheese.
Broil for 3-5 minutes, until cheese melts
Gluten Free Garlic Bread
Melt together oil, butter, garlic and Italian Seasoning in microwave bowl.
Spoon over bread halves.
Broil 3-5 minutes, until bread begins to brown.
To keep the chicken extra crispy, I like to bake it on a cooling rack. This keeps the bottom from getting soggy.
