Gluten Free Lemon Dill Panko Crusted Salmon

Gluten Free Lemon Dill Panko Crusted Salmon is an easy meal, packed with lemon and dill flavor and a crunchy gluten free panko crust.

Ingredients

  • 4-6 salmon fillets
  • salt & pepper
  • 1 recipe Easy Lemon Dill Sauce
  • 2/3 cup gluten free bread crumbs
  • 2 Tablespoons chopped dill
  • 1 teaspoon grated lemon zest
  • 1/2-1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons Olive Oil
  • Oil for pan

Instructions

  • Preheat oven to 425.
  • Mix together gluten free bread crumbs, dill, lemon zest, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Sprinkle salt and pepper over salmon fillets.
  • Spread about 1 tablespoon Lemon Dill Sauce over each fillet.
  • Divide breadcrumbs on top of fillets and press to adhere.
  • Heat 1-2 Tablespoons oil in a cast iron skillet (or other oven proof pan) on stove over medium heat.
  • Place fillets skin side down and cook for 3-4 minutes. Don't turn them.
  • Place pan in oven for 5-7 minutes or until done.
  • Remove from oven, cover with foil and allow to rest for 5 minutes.
  • Plate and enjoy!
