salmon fillets
salt & pepper

gluten free bread crumbs

Tablespoons
chopped dill
1
teaspoon
grated lemon zest
1/2-1
teaspoon
salt
1/4
teaspoon
pepper

Olive Oil

Instructions
Preheat oven to 425.
Make
Easy Lemon Dill Sauce
Mix together gluten free bread crumbs, dill, lemon zest, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Sprinkle salt and pepper over salmon fillets.
Spread about 1 tablespoon Lemon Dill Sauce over each fillet.
Divide breadcrumbs on top of fillets and press to adhere.
Heat 1-2 Tablespoons oil in a cast iron skillet (or other oven proof pan) on stove over medium heat.
Place fillets skin side down and cook for 3-4 minutes. Don't turn them.
Place pan in oven for 5-7 minutes or until done.
Remove from oven, cover with foil and allow to rest for 5 minutes.
Plate and enjoy!
