Louisiana Style Red Beans and Rice

Ingredients

  • 3 cans red beans
  • 1 package First Fresh Hot Italian Chicken Sausage
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 teaspoons gluten free chicken bouillon or paste
  • 2 bay leaves
  • 3 teaspoons minced garlic
  • 1 small onion minced
  • 2 stalks celery minced
  • 1-2 teaspoons gluten free Cajun seasoning
  • 1 Tablespoon Vegetable oil
  • Green onions for garnish

Instructions

  • Brown Sausage Links in 1 Tablespoon Oil, Remove and set aside.
  • Sautee onion, garlic, and celery for about 3 minutes, until onion begins to appear transclucent.
  • Open beans and add to pot. Do not drain.
  • Add 1 teaspoon dried oregano, 1 teaspoon dried thyme, 2 bay leaves, and chicken boullion.
  • Bring to boil, lower to low and simmer for 15 minutes.
  • While simmering slice First Fresh Saussage links.
  • Using a spoon, smash some of the beans against the side of the pot.
  • Add to pot along with 1 teaspoon (or to taste) cajun seasoning.
  • Simmer 5 minutes.
  • Serve with white rice and top with sliced green onions
