Ingredients
Strawberry Sauce
2poundsFresh Strawberriesstemmed and cut
1/3cupgolden agave syrup(or honey)
1/4teaspoonvanilla
1 tbsplemon juice
Strawberry Mousse
2cupswhipping cream
1/4cupsugar
1cupstrawberry sauceingredients above
Instructions
Strawberry Sauce
Combine Strawberries, agave, vanilla, and lemon juice in a small pot.
Cook over medium heat, stirring frequently and breaking up strawberries for about 5 minutes.
Strawberries should be soft and easily mashed.
Strain strawberry mixture into bowl using a mesh strainer.
Press strawberries to get as much of the juice and syrup out as possible. Place left over strawberry mash aside to use in smoothies later.
Pour strawberry sauce back into pot and bring to a boil, stirring frequently, reduce heat and simmer 5 minutes.
Let cool.
Strawberry Mousse
Whip together whipping cream and sugar until peaks form.
Fold in 1/3 cup strawberry sauce
Place about 2 Tablespoons strawberry sauce in bottom of small bowl or small mason jar. Top with whipped cream strawberry mixture.
Place in refrigerator until ready to serve.
Top with fresh strawberries.
Notes
If you prefer, the sauce and strawberry mousse can be kept separate until ready to serve and served out of a large bowl.
