Summer Veggie Zoodles with Red Pepper Lemon Vinaigrette
Ingredients
Red Pepper Lemon Vinaigrette

olive oil

lemon juice

red pepper

teaspoon
dried onion flakes

teaspoon
salt
Herbed Ricotta
1/4
cup
ricotta cheese
1
teaspoon
dried oregano
1/2
teaspoon
garlic powder
Veggies
1
zuchinni
zoodled
2
squash
zoodled
cherry tomatoes
halved
Instructions
Mix all dressing ingredients together in a jar. Shake will.
Mix herbed ricotta ingredients.
Toss zoodles and tomatoes with 1- 2 Tablespoons vinaigrette.
Top with herbed ricotta.
