Sweet Potato Breakfast Hash

Ingredients

  • 3 pounds sweet potatoes diced (about 3 medium ones)
  • 1 package ground breakfast sausage
  • 4 eggs
  • cilantro for garnish
  • Queso Fresco crumbly white cheese
  • Salt and Pepper to taste

Instructions

  • Brown sausage in cast iron skillet.
  • Remove Sausage and set aside.
  • Add diced sweet potatoes.
  • Salt and pepper sweet potatoes.
  • Brown in skillet for about 5 minutes, turning occasionally.
  • Place skillet in 400 degree oven.
  • Cook potatoes for 30 minutes, stirring occasionally.
  • Test for doneness, if not done, cook for 10 minutes and then recheck.
  • Mix sausage into potatoes.
  • Make four holes.
  • Crack one egg into each hole.
  • Place back in oven and cook until egg is desired doneness.
  • Top with cilantro and queso fresco.

Notes

If you don't have a cast iron skillet you can roast the potatoes on a sheet pan and combine it all in a skillet on top of the stove. Make the four holes and crack in the eggs. Cover and cook until eggs are desired doneness.
