Tropical Shrimp Salad Stuffed Avocado

Ingredients

Shrimp Marinade

  • 1 orange juiced
  • 1/2 lime juiced
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • zest of half orange
  • zest of half lime
  • 1/2 teaspoon gluten free cajun seasoning

Shrimp Salad

  • 1 pound clean and devained shrimp
  • 1 heaping Tablespoon Mayo
  • 1/4 cup chopped mango
  • 2 heaping Tablespoons chopped Cilantro

Avocado

  • 2 Florida Avocados or 4 Haas

Instructions

  • Combine all marinade ingredients in a blender or food processor.
  • Combine shrimp and marinade in ziploc. Marinade for 20 minutes.
  • Cook shrimp in a non stick skillet until done, being careful not to overcook.
  • Cut up shrimp and toss with mango, cilantro, and mayo. Add salt to taste.
  • Put shrimp salad inside avocados and serve!
