Mix together spinach, bacon, 1/2 of mozzarella, garlic powder, salt and pepper.
Divide between chicken and roll tightly.
Spread half of white sauce in bottom of dish.
Place chicken on top sauce.
Cover with remaining sauce.
Cover with remaining mozzarella.
Wrap tightly with foil.
Bake for 25 minutes.
While baking combine gluten free bread crumbs, parsley, and melted butter.
Remove from oven.
Spread bread crumbs over top.
Cook for another 10 minutes, until chicken is one and bread crumbs are golden.
