Divide the sliced monterrey jack cheese on each circle of dough.
Divide the cottage cheese mixture on top of the monterrey jack cheese.
Divide the BBQ chicken mixture on top of the cottage cheese.
Top with remaining cheddar cheese.
Smear beaten egg around the edges of dough.
Carefully pull over and press together edges of dough to form a pocket. Use a fork to press edges together.
Brush remaining egg on top, sprinkle with grated parmesan if desired.
Bake at 350 degrees for 25-30 minutes.
