Crunchy Gluten Free Boneless Chicken Wings with Dipping Sauce Trio

Ingredients

Gluten Free Boneless Chicken Wings

  • 1 pound chicken breast cut into cubes
  • 2 eggs whisked or 1/2 cup olive oil
  • 1/2 cup gluten free flour
  • 14 ounce bag [Plentils:https://enjoylifefoods.com/our-foods/plentils/]
  • salt and pepper

Tzatziki Sauce

  • 1 6 ounce cup plain gluten free yogurt
  • 2 teaspoons lemon juice
  • 2 teaspoons minced garlic
  • 1/4 cup shredded cucumber water squeezed out
  • 1 Tablespoon fresh chopped dill
  • 1/4 teaspoon salt

Tahini Sauce

  • 2 Tablespoons lemon juice
  • 1/3 cup tahini
  • 1 Tablespoon white wine vinegar
  • 1 Tablespoon honey
  • 2 Tablespoons water more if to thick

Sweet and Sour Sauce

  • 1 Tablespoon coconut aminos or gluten free Tamari
  • 1 1/2 Tablespoons ketchup
  • 1/2 cup apricot preserves
  • 1 Tablespoon rice vinegar

Instructions

Gluten Free Boneless Chicken Wings

  • Preheat oven to 425.
  • Place plentils in food processor. Pulse until fine crumbs.
  • Salt and Pepper chicken chunks.
  • Dip chicken chunks in egg or oil, gluten free flour, back in egg or oil, then dredge in plentil crumbs.
  • Place crusted chicken on wire cooling rack, on top of a baking sheet.
  • Bake for 20 minutes, turning once.

Tzatziki Sauce

  • Place all ingredients in blender or magic bullet and blend well.
  • Refigerate

Tahini Sauce

  • Mix all ingredients together well.
  • Refigerate

Sweet and Sour Sauce

  • Mix together all ingredients well.
  • Add additional coconut aminos as needed.
