coconut oil

brown sugar

gluten free vanilla

gluten free flour

baking soda

baking powder

teaspoon

shredded carrots
Cream Cheese Frosting
8
ounces
softened cream cheese
1
cup
powdered sugar
1
teaspoon
vanilla
Instructions
Preheat oven to 350 degrees.
Grease 9 x 9 square pan.
Combine dry ingredients in a bowl and stir.
Combine wet ingredients in a bowl and whisk together well.
Add dry ingredients to wet ingredients and stir gently.
Fold in carrots.
Spread into 9 x 9 pan.
Bake for 25 to 30 minutes or until toothpick comes out clean in the middle.
Let cool for 5 minutes in pan before turning out onto wire cooling rack.
Cool completely before icing
CreamCheese Frosting
Beat together softened cream cheese, powdered sugar and vanilla until well combined
Layer Cake
Cut cooled 9 x 9 cake in half.
Spread half of frosting over first half.
Stack second on top.
Cover with remaining frosting.
Store leftovers in the refrigerator.
