Easy Gluten Free Lemon Cheesecake Tarts

Ingredients

Crust

  • 1 1/2 cups gluten free all purpose flour
  • 3/4 cup butter softened
  • 1/4 cup plus 2 Tablespoons powdered sugar

Filling

  • 1 cup granulated sugar
  • 2 teaspoons grated lemon peel if desired
  • 3 tablespoons lemon juice
  • 2 eggs
  • 1 8 oz package softened cream cheese

Instructions

  • Mix together crust ingredients. Divide into 6 pieces and press into tart pans.
  • Bake at 325 for 20 minutes.
  • While tarts are baking beat the sugar, lemon peel, lemon juice and eggs together until the eggs lightened (about a minute or so).
  • Beat in the cream cheese.
  • Divide mixture among baked tarts.
  • Bake for an additional 25 to 30 minutes.
  • Let cool completely.
  • Top with berries as desired.

Notes

If you do not have tart pans, it can be made in a 9 x 9 dish. You will not need all of the shortbread dough.
