Easy Gluten Free Lemon Cheesecake Tarts
Ingredients
Crust
1 1/2
cups
gluten free all purpose flour
3/4
cup
butter
softened
1/4
cup
plus 2 Tablespoons powdered sugar
Filling
1
cup
granulated sugar
2
teaspoons
grated lemon peel
if desired
3
tablespoons
lemon juice
2
eggs
1 8
oz
package softened cream cheese
Instructions
Mix together crust ingredients. Divide into 6 pieces and press into tart pans.
Bake at 325 for 20 minutes.
While tarts are baking beat the sugar, lemon peel, lemon juice and eggs together until the eggs lightened (about a minute or so).
Beat in the cream cheese.
Divide mixture among baked tarts.
Bake for an additional 25 to 30 minutes.
Let cool completely.
Top with berries as desired.
Notes
If you do not have tart pans, it can be made in a 9 x 9 dish. You will not need all of the shortbread dough.
