Gluten Free Brownie Cupcake Surprise

Ingredients

  • 12 ounces gluten free sugar cookie dough rolled into 12 balls
  • 12 Goodie Girl Birthday Cookies

Brownie mix

Dry Ingredients

  • 1/2 cup gluten-free flour
  • 1/3 cup gluten-free cocoa powder
  • 3/4 Cup Sugar
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp gluten-free instant espresso powder optional

Wet Ingredients

  • 2 eggs room temperature works best
  • 1/2 cup coconut oil
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350.
  • Mix together dry brownie ingredients.
  • Add in wet ingredients.
  • Mix well.
  • Line 12 muffin tins with cupcake liners.
  • Press one ball of gluten free sugar cookie dough into each liner.
  • Press one Goodie Girl Birthday Cake cookie into each liner.
  • Top with brownie mixture.
  • Add sprinkles if desired.
  • Bake 30-35 minutes or until cooked through.
