Gluten Free Scalloped Potatoes and Ham

- 4 cups potatoes sliced
- 3 Tablespoons butter
- 3 Tablespoons gluten free flour
- 2 cups milk
- 1/4 teaspoon nutmeg
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 cup ham chopped, about 8 ounces
Cracker Crust
- 2/3 cup gluten free cracker crumbs 2 sleeves Schar Table Crackers
- 2 Tablespoons butter melted
- 1/2 teaspoon salt
- 1/2 teaspoon Italian Seasoning or dried parsley
Preheat oven to 350 degrees.
Grease 9 x 9 baking dish.
Melt 3 Tablespoons butter in a medium saucepan.
Whisk in gluten free flour, nutmeg, salt and pepper.
Slowly add to cups of milk, whisking constantly.
Stir, allowing to thicken, 3-5 minutes.
Layer potatoes, ham and sauce in baking dish.
Grind gluten free crackers in the food processor.
Add two tablespoons melted butter, 1/2 teaspoon salt, and 1/2 teaspoon Italian Seasoning.
Pulse to combine.
Spread cracker crumbs over potatoes.
Cover with foil and bake 30 minutes.
Uncover and bake an additional 30 or until potatoes are tender.
